Hey Eddie I think the main thing for picking out a top is doing a tap test. I was originally going to do a Mah top back and sides but the shop that was splitting the back ect on their bandsaw suggested using something else for the look of it. They had a piece of cedar that I tap tested and it had a real ring to it so I used it. Just dumb luck. I would say go to a shop that supplies tops and listen to a few and compare it to your maple or birch. My '68 Framus has a maple top it sounds alright. You could do maple top and birch b&s.

Pic 1 headstock inlay, maple cap with Walnut inlay and a Mahogany diamond Pic 2 stringer up for the first time Pic 3 complete along with pic guard I added as the cedar top is soft and I'm not:) I used light strings as I didn't want it to fold in half from the tension but she has held up well. I always have the same fear when first stringing up something repaired or built for the first time. It looks like it will handle medium or heavy gauge. The acoustic looks impressive!

My second acoustic was made same as this one, I did spend more time on the oil finish though:)
